As I was perusing my local health food store, I stumbled across the protein bars and found myself spending thirty minutes scouring ingredients and nutrition. Most of the bars (for more than $2/bar) were full of grains, soy, and sugar. I did some tinkering and came up with an incredible grain, soy, and dairy free bar. We used Garden of Life brand protein+greens powder, which gave each bar 8 grams of protein. My toddler (and myself as well!) have been enjoying one as an after school snack.
1/2 cup nut or seed butter (I’m currently in love with sunflower seed butter)
1/4 cup local honey
1/2 cup chocolate protein powder (I use Garden of Life brand)
1/4 TSP baking soda
12 tbsp . chia seeds
1. Preheat oven to 325 degrees Fahrenheit
2. Combine ingredients.
3. Add to a greased pan (I used sunflower seed butter) and bake for about 12 minutes.
