For those of you that love shopping local,the farmers markets are now loaded with spinach, Swiss chard, and kale. Did you know that there is an easy way to store these greens for the winter?
Greens powder. Sprinkle it into scrambled tofu or eggs, add it to casseroles. One cup of powder equals about a pound of leafy greens!
Gather some greens, wash and de-stem any hard stalks. Lay flat on a dehydrator sheet or an oven set as low as possible. Dry for 6-10 hours or until crispy. Remove and crush (my toddler loves that part) into a bowl. Store in an airtight container.
