Raw Apple Cinnamon and Chia Bowl

Originally I made this on a “food prep day” in order to set aside for a quick breakfast… When dinner time on “food prep day” arrived, I had to try it. I’m hooked. It’s naptime here, and I’m doing my best to not eat the rest of it. The recipe below serves about two. It makes an excellent meal alongside Chai tea (see my first blog post from March 2015 for a recipe). It’s packed with amino acids, fiber, and vitamins. Apples

1. Core 3 apples and discard (or better yet, compost) the cores. Toss into a food processor with 4 medjool dates and 4 tbsp. chia seeds. Pulse until the texture is similar to oatmeal. Season with cinnamon and nutmeg (I used about 2 tsp cinnamon and 1 tsp nutmeg)

2. Refridgerate for at least 3 hours.

3. When you are ready to serve, top with hemp seeds, a few walnuts, and  few pecans.
